I chose 'Edit metadata' on an issue (https://pagure.io/fedoramagazine-images/issue/3) and added my name as assignee. When I choose 'Update,' the ownership is not set but instead reverts to Unassigned.
Did you add a comment after assigning the issue to you?
If so I know the problem and it was due to this new comment being added after the issue being assigned and w/o reloading the page in between (it's a small bug in the JS updating the page based on SSE).
I need to fix this.
