Add --postinstall to pass --postinstall to the mock invocation, to ensure that package that's been built is actually installable.

TIL. Yes, that does indeed work, I completely missed that this supported passing arbitrary options, thanks! Probably still worth it to leave this ticket open, --postinstall should be common enough to warrant a top-level knob alongside the other options we have there.
