So, of those 3 the only one that actually appears to exist is ovc-devel. The others show up in hyperkitty, but do not have any actual config in mailman3.
So, I'd propose:
(re)create the ovc list. This may wipe the old archives out, but it might also keep it around, not sure. Do you need the old archives?
delete the other 2 lists

I'd prefer to delete the ovc-devel and ovc-press mailing lists, especially if there is nothing in the archives.

The ovc list is only interesting for me for the archives. I don't anticipate this list being used as the original project is no longer active. But the mailing list may be the best place we have to get in touch with the original maintainers.

If you can re-create the ovc list without wiping out the archives, I'd like that. But if you're not sure or there is no way to safely test, then let's leave that list as it is. I'd rather not lose that archival history.
ok. I've deleted ovc-devel.
I'm not at all sure what will happen to the archives if I try and re-create ovc, so I will leave it alone.
I suppose if @abompard has a second to look at why ovc and ovc-press dont seem to exist that would be cool. Otherwise I guess we are done?
