Is there a way to change configuration similar to https://jenkins.fedorainfracloud.org/job/fedpkg/ in terms of multiple configurations? I would like to run it on same set of environments (+ rawhide if possible). I'm afraid that it could mean deleting this project and recreating it again as multi-variant.

Ok, I've stored configuration and we can go that way. Would it be later possible to add/change these variants, or it is not possible?
Yes, it is possible to change matrix of multi-configuration project after creation.

You will also loose the entire build/CI history, is this fine? (you're basically restarting from 0)
Yes, we're still in testing mode here, so it will not hurt us too much.
