http://pagure.io/infra-docs-fpo/ uses 'master' as the default branch -- which we should change, but there are a few additional things tro consider here:

I may be able to answer that one. docs.fp.o use a file named site.yml to generate everything. It use master branch by default (I think it will use main for the next release of antora 3.0.0). You can still specify the branch to use in this file.

For staging, this same file from the stg branch is used. It usually use the same branches configuration as prod, but you can use a different one for your doc repo if you'd like. Note that the infra doc repo is not present in the stg configuration file, but there is a PR waiting for that purpose.
I think it should be done by docs team and I am not sure if there is anything that infra can do here, but as for the suggestion, we moved everything to main, it can be used to keep the consistency.
