selinux-policy-3.14.3-66.hs.el8 was at one point tagged for hyperscale8s-packages-main-release, but I've untagged it weeks ago (and, indeed, it has been removed from the mirrors). However, https://cbs.centos.org/koji/packageinfo?packageID=8437 still lists it in the tag.

Well, nothing to fix as it's normal :
https://cbs.centos.org/koji/packageinfo?packageID=8437 : it shows just that pkg selinux-policy was indeed added to your tags as a pkg you can build for these tags, and that's what you did with cbs add-pkg command, but so far no specific build/NEVR is added in the tag[s]
selinux-policy
cbs add-pkg
While https://cbs.centos.org/koji/buildinfo?buildID=32129 shows that such specific NEVR for that pkg was built but not tied to any tag anymore : Tags No tags
Tags No tags
So when you tag-build|untag-build it indeed adds/removes specific builds to tags and so on mirror/repositories.
