#1020 Refresh some EC2 instances for infra

We had some CentOS Linux 7 nodes deployed with a specific instance type and other limitations that we'd need to get rid of.
We'll have to :

  • deploy el8 ec2 new instance type
  • attach bigger ebs volume (and init it with LVM)
  • sync data (after ansible has configured the nodes)
  • put new one in prod
  • decommission/terminate older ec2 instances
